Easy Cookie Recipes and Childhood Memories
Usually when I write, I'll research a bit of history , something that says when and where my subject was first introduced into history. That wasn't so easy with cookies since officially they date to early Persia (Iran of today), but it's rumored that Eve was baking cookies when she offered Adam the apple (that's only a rumor of course). Actually, if you do just a bit of digging, you'll find that cookies stretch back to when sugar was first discovered. While the exact date when some crusading soldier may have said... "My Lord, this is strange but pleasing to my palette" (or some such words), is lost to the fogs of time, it may have occurred as early as 500 BC, then lost again till being rediscovered by Alexander the Great. No matter the actual date, cookies have been a staple of the world's culture every since and I see no indication of that changing anytime soon. Of course the names are different the world over, what's known as a cookie in the states, is called a "Biscuit" in the UK, a "Galletas" in Spain and a host of other names which probably aren't relevant to the subject of this article, "easy cookie recipes". I hope you won't mind if I wax poetic, fact is cookies invoke childhood memories of my mom and I spending quality time, and me asking permission (or was it forgiveness) after I licked the cookie bowl clean. Okay, recipe Uno (that's #1 in case you wondered). WARNING.. . Most of these recipes are filled with butter and sugar and can be quite addictive, serve them to your hungry brood with love and moderation (good luck). Shortbread Chocolate Chip Cookies (also known as "cookies to die for") About 1 cup of butter (more or less based on experience) Just a wee bit of salt 1/2 cup brown sugar (much better than refined white sugar) 1 teaspoon vanilla (an estimate is fine) 2 cups flour (this is one measurement I pay attention to) 1 cup chocolate chips (sometimes I'll sprinkle in a VERY full cup) Okay, now it's time to do just a little bit of magic, and if you have an enthusiastic son or daughter, time to hand them the mixer (carefully though) or a large mixing spoon. Mix the butter and brown sugar until it becomes light and fluffy (this takes a little effort, but is soooo worth it) Time to add in the vanilla, flour, salt, and that liberal dose of chocolate chips. Now then, this is where the art comes in and can be a lot of fun if you get the little ones involved rolling those 1 inch balls. If they're a little big or small, just smile and say, "Good job", the time you spend with them will be priceless. Roll the dough into (approximate) 1 inch balls. (Once this is completed and before you flatten them, dip a large fork in white sugar (no brown sugar this time), then flatten them into traditional cookie shapes. NOTE: If you or the kids want to flatten them into different a shapes (i.e. stars or squares), that's fine and dandy. Okay, time for baking. You should have already pre-heated the oven to 325 degrees (forgot to mention that, my bad, but I get so impatient when I'm baking). No children for this part, unless they are old enough to handle the responsibility. Place the completed cookie dough in the oven, bake until golden (do watch carefully since you don't want them to brown), let them cool slightly, then serve. When they're ready the kids will enjoy a real treat and they'll be smiling for hours. As for you, well accept hugs all around since you only get one cookie, after all us girls have to watch our weight, ain't life grand!
